{"id":11421,"date":"2018-01-18T13:23:07","date_gmt":"2018-01-18T00:23:07","guid":{"rendered":"https:\/\/bakers-fresh.com\/?p=11421"},"modified":"2018-02-22T14:22:19","modified_gmt":"2018-02-22T02:22:19","slug":"chocolate-cream-rolls","status":"publish","type":"post","link":"https:\/\/bakers-fresh.com\/?p=11421","title":{"rendered":"Chocolate cream rolls"},"content":{"rendered":"<p>[vc_row css=&#8221;.vc_custom_1474288085355{padding-bottom: 20px !important;}&#8221;][vc_column][vc_column_text]<\/p>\n<h4>Ingredients:<\/h4>\n<p><strong>BATTER<\/strong><br \/>\n4 large eggs, room temperature<br \/>\n3\/4 cup sugar<br \/>\n1\/2 teaspoon salt<br \/>\n1 teaspoon vanilla extract<br \/>\n1 teaspoon chocolate extract, optional<br \/>\n2\/3 cup Bakers Fresh All Purpose Flour<br \/>\n1\/3 cup cocoa<br \/>\n1 1\/4 teaspoons baking powder<br \/>\n1\/4 cup vegetable oil<br \/>\n6 tablespoons buttermilk<\/p>\n<p><strong>FILLING<\/strong><br \/>\n1 cup whipping cream<br \/>\n1 teaspoon chocolate extract, optional<br \/>\n1 tablespoon sugar<br \/>\n2 teaspoons Instant ClearJel<br \/>\n1\/2 cup finely grated dark chocolate<\/p>\n<p><strong>GLAZE<\/strong><br \/>\n1\/2 cup whipping cream<br \/>\n2 tablespoons corn syrup, light or dark<br \/>\n1 cup chopped semisweet or bittersweet chocolate, or chocolate chips<\/p>\n<h4>Instructions:<\/h4>\n<ol>\n<li>Preheat the oven to 350\u00b0F. Line a jelly roll pan with parchment paper and spray with non-stick vegetable oil spray. To\u00a0make the cake: In a large bowl, beat the eggs until thick and pale, then beat in the sugar, salt, and extracts.<br \/>\nSift together the flour, cocoa, and baking powder, and fold gently into the egg mixture. Whisk together the oil and buttermilk and fold in, stirring just until combined.<\/li>\n<li>Spread the batter onto the pan and smooth with a spatula. Bake the cake for 10 to 12 minutes, until the top springs back when pressed gently.<br \/>\nRemove the cake from the oven, let it cool in the pan for 1 to 2 minutes, then loosen the edges with a knife. Turn out onto a tea towel lightly dusted with confectioners&#8217; sugar (or onto a piece of parchment), roll up loosely (starting with a short end), and let cool completely.<br \/>\n<strong>To make the filling:<\/strong> Stir together the cream and chocolate extract in a large bowl. Mix the sugar and ClearJel, then sprinkle over the cream. Whip on high speed until soft peaks form, and fold in the grated chocolate. Refrigerate until needed.<br \/>\n<strong>To make the glaze:<\/strong> Gently heat all of the ingredients until the chocolate is melted and the mixture is smooth. Cool for 10 to 15 minutes to thicken slightly.<br \/>\n<strong>To finish the cake:<\/strong> Unroll the cake and spread it with the filling. Re-roll, and place seam-side down on a serving plate. Trim the edges for a clean appearance. Drizzle with chocolate glaze, using a spoon or a squeeze bottle.<br \/>\nServe the cake immediately, or refrigerate until ready to serve, up to 24 hours.
